"Aged on the Hoof"
Vaca Vieja! For you that don't know it's Spanish for Old Cow, 6 years old or older. Many countries and cultures have utilize these amazing animals for centuries. This style of beef is Know well in the Basque region of Spain and were used in Eastern European countries for celebratory dinners once or twice a year.
The farmers we partner with here in Michigan are using Organic pastured practices and are grass fed certified. While being aged on the hoof for 7 plus years these cows become much more complex in flavor and nutrient dense. Beef that tastes like beef!
